Máximo del Rey Silo is a raw, whole cow's milk cheese with natural Geotricum candidum molds in its large-format rind with a weight that always exceeds 1.5 kg. It is a huge lactic curd cheese that slowly ages in the underground cellar of our cheese factory, making it a tasty, healthy and sustainable cheese.
