QUESOS DE HUALDO S.L.

Quesos de Hualdo is a contemporary artisan dairy located in El Carpio de Tajo (Toledo) on the Hualdo Estate, a sustainable project where various agricultural activities are integrated into a circular economy system.
Here, we craft artisanal cheeses using the milk from our own Manchega sheep herd, a native breed.

Our livestock grazes daily in our fields, nourished by what we cultivate on our own farm, thus imparting a multitude of nuances and aromatic notes to the milk. We work with raw, freshly milked milk, which we bring by gravity to the milk tank. In our cheese rooms, the cheeses ripen on wooden boards, where they are turned daily and hand-washed, providing personal care to each of our pieces.

The result is cheeses made from raw milk with natural rinds, innovative and original, with a unique personality and great sensory complexity.

Among our assortment:
A very personal version of Manchego P.D.O., with a juicy texture and elegant flavor.
PI Cheese: a semi-soft paste, with a creamy texture and a moldy rind with aromas of cave and dried mushroom.
Lambda Cheese: Our semi-soft cheese with a washed rind, with intense aroma and clean reminiscences of leather and wool.
Sigma Cheese: Semi-cooked cheese, with toasted tones and sweet aromas of bakery.

In short, a perfect coexistence between agricultural activities and the rich biodiversity that inhabits our ecosystem, seeking to produce sustainable, healthy, and delicious food!
