Description :

Cooleeney is a pasteurised cow's milk cheese. It is a soft, bloomy-rind cheese that offers a soft, melt-in-the-mouth texture with light hints of mushroom and a pleasant bitterness on the finish. Maturation for six to eight weeks. Awarded at the World Cheese Awards 2010 (Silver Medal).

COOLEENEY FARM

For four generations, the Maher family has farmed the land at Cooleeney Farm. Dairy farming has always been the main activity on this farm, located in the heart of the Golden Vale in County Tipperary. This part of Ireland is renowned for its rich land and rich, green meadows. Their herd of Friesian cows enjoys these pastures and produces a particularly sweet milk, ideal for the artisanal production of their cheese. Goat's milk is supplied by local breeders.

Gortnamona
This cheese is made from pasteurised goat's milk from a nearby herd. It has a white bloomy rind, a silvery white soft paste that's both chalky in the center and creamy from the rind.

It is characterised by a sweet and creamy taste of delicate mushroom aromas. Maturation for five to six weeks.

Gleann Óir
This cheese is made from pasteurised goat's milk from a nearby herd. Natural rind, mottled with grey appearance. It is distinguished by a pronounced taste, with notes of cellar & mushrooms. Matured for a minimum of ten weeks.

Ruby
Ruby is a soft, craft beer-washed cheese from a local brewery, Whitefield Brewery, in Templemore. This cheese has a soft texture, and is characterized by a distinct malt flavour.
