Description :

Knockanore Farmhouse Cheese is made on a farm in the village of the same name, in County Waterford. The Lonergan family has farmed the land for over 60 years, raising a herd of 150 Friesian cows that spend most of the year outdoors. Knockanore makes cheddars from raw, rich, whole milk, following traditional cheddar-making techniques. These cheeses include white, red and smoked cheddars.

Irish Food Board - Bord Bia

Bord Bia - The Irish Food Bord will be promoting Irish dairy products at Salon du Fromage et des Produits Laitiers. This year, once again, the Emerald Isle will be in the spotlight, showcasing its high quality dairy products, thanks to 5 farmhouse cheese and yogurt producers. You’ll discover all that Irish dairy has to offer at our Origin Green stand, with the presence of Cashel Farmhouse Cheesemakers, Cooleeney Farmhouse Cheese, Knockanore Farmhouse Cheese, Traditional Cheese Company and Velvet Cloud.

Origin Green is Ireland's national food and drink sustainability programme, of which our 5 exhibitors are members. It remains the only country-wide sustainability initiative for the agri-food sector. Operating at farm, slaughter, processing and distribution levels, members register voluntarily and are independently monitored. Each member develops a sustainability plan, setting ambitious targets in a range of areas such as sourcing of raw material, manufacturing processes, resource-allocation and social responsibilitý. While enjoying our delicious samples, you can rest assured that our suppliers have sustainability at the forefront of their business.

Cashel Farmhouse Cheesemakers is a family farm established in 1984 in County Tipperary, renowned for their cow's milk Cashel Blue cheese. This cheese is made according to the traditional process, using a unique family recipe. The characteristic taste of Cashel cheeses is a marriage of flavours, and it is much-appreciated for its creaminess, acquired through a long maturing process.

Cooleeney Farmhouse Cheese, from County Tipperary, is produced by the Maher family, who farm the land at Cooleeney Farm. Dairy farming has always been the main activity on this farm. The Mahers produce soft and hard cheeses from cows’ and goats’ milk: Cooleeney, Smoky Tipperary Orchard, Gortnamona, Gleann Óir and Ruby. They use milk from their own herd of Friesian cows and goat's milk supplied by local breeders.

Knockanore Farmhouse Cheese is made on the farm in the village of the same name, in the Waterford area. Knockanore make white, orange and smoked cheddars using raw, rich, whole milk, following traditional manufacturing techniques.

Traditional Cheese Company specializes in the promotion and distribution of high-quality cheeses in Irish and international markets. Traditional Cheese Company has a range of over 800 products, including cheddars, hard and soft cheeses, blue cheeses, flavoured varieties and much more! The company can cut, wax and package private-label and own-brand products, as well as age and grade their cheddars.

Velvet Cloud was founded in 2015 by the Flanagans on their farm in County Mayo. This family-run business produces Ireland's only sheeps’ milk yogurt and one of the few Irish sheeps’ milk cheeses, sold to high-end foodservice and retail. Their products include a natural grass-fed sheep's yoghurt, a sheep's labneh, a semi-hard sheep's cheese with a natural rind, and a semi-hard grass-fed cow's milk farmhouse cheese matured for 12 weeks.
