The Caciocavallo Irpino cheese was present this year at the Cheese and Dairy Products Fair

Seen at the D&D stand during the 2024 Cheese and Dairy Products Fair: this stretched cheese made from raw cow's milk, with a color ranging from earthy to light gray, containing a compact dark yellow paste inside.

The aging process takes place in ancient tuff and stone caves in the Irpinia region of southern Italy. This optimal microhabitat allows the cheeses to acquire inimitable organoleptic properties. You can choose between a short aging period (2 months) or a long aging period (6 months), with the Caciocavallo Irpino delivering maximum flavors.
