Jeune Montagne is the main cheesemaker of Laguiole PDO cheese, Tome fraîche de l'Aubrac IGP cheese and Aligot de l’Aubrac. Young farmers of the Aubrac Mountains in Southern France created Jeune Montagne in 1960. Their goal was to maintain the centuries-old local tradition of cheesemaking.
 
Jeune Montagne makes cheeses and meals with raw and whole milk from Simmental and Aubrac cows. Our cows graze in pastures and eat local hay. Aubrac mountains pastures and hay have many species of aromatic flowers and plants.
 
Nowadays, 77 farms in Aubrac are part of Jeune Montagne. All our farms adhere to Laguiole PDO cheese specifications. The agricultural practices of our farms contribute to animal welfare, environmental protection and milk quality.
