You are participating in the Salon du Fromage et des Produits Laitiers this year. What are your expectations for the 2024 edition?

This event always brings together true experts in European cheese. I expect to discover new trends, connect with current and potential suppliers, and identify cheeses that I believe have the potential for success in the American market.

As a professional in the field, why is this event important for business?

This salon is an ideal place to meet and discuss current business and opportunities with producers who don't necessarily attend the huge trade shows. It's also great to be present at a salon where some of the best dairymen, affineurs, and cheesemongers from all over Europe gather.

What types of products or categories of products particularly interest you?

I am especially interested in understanding new and emerging cheese trends in Europe, those that have not yet reached the United States, whether in form, flavors, or new modes of consumption.

In your opinion, what are the latest trends in the American cheese and dairy market?

American consumers are increasingly interested in traditional cheeses that have historical and cultural significance. There is a growing awareness of AOP and terroir in the American market. At the same time, new methods and more modern flavored cheeses are also popular.
