Description :
Mozzarella di Bufala Campana is a fresh spun cheese, which owes most of its unique characteristics to the fresh water-buffalo’s milk produced in the place of origin, a very savoury and digestible milk, rich in proteins and minerals.
Mostly known in its typical ball shape (up to 800g), other sizes like bocconcini, ciliegine, ovoline, nodini and trecce (up to 3kg) can be manufactured, as well as the smoked variant (affumicata).
The Consorzio di Tutela della Mozzarella di Bufala Campana, born in 1981, teams up more than 90 producers and it is the sole organization appointed by the Italian Ministry of Agricultural to protect, survey and promote this PDO cheese.
The label P.D.O. refers to the region and production area of a specific cheese, whose characteristics are strictly related to a geographic area, the only place where it can be produced: Campania Region (90% in Caserta and Salerno provinces), some places of Lazio, Apulia and Molise Regions.
