In the heart of Tuscany, for over twenty years, De'Magi – Alchimia de’ Formaggi, born from the passion and intuition of Andrea Magi, has been creating unique alchemies ready to amaze with their originality.

We are constantly striving to create new taste experiences for those who love this exceptional product. Continuing to receive recognition through competitions and awards, our exclusive cheeses are increasingly making their way into the international market.

The opening of new foreign markets, stimulating and exciting, has inspired us to create a new cheese that breaks down all borders, refined with an ingredient widespread all over the world, but which in some way represents us, will be a novelty that we will present on the occasion of this edition of Salon du Fromage.
The new cheeses De' Magi are ready to amaze you, this year's research has led us to explore new flavors through constantly evolving aging techniques, which have given rise to several excellences such as POPPART, a cheese that has an articulated bouquet, artistic in appearance and taste.
And again new experiences for the palate, linked to our meditation cheeses, such as blue cheeses and reserves, all to be tasted.

Alchemy is not a science nor mathematics. It is, according to Andrea, a subtle game between cheese, natural ingredients and know how. The affineur selects flavours and aromas to create new, surprising and ever changing cheeses. Instinct and intuition are both needed, as well as knowledge and experience. It is also important to be completely patient as this allows you to look after your cheeses until they reach the smell and the aroma you are after. It is quite difficult to explain a passion, you can only go ahead and taste it.

Time passes relentlessly for everyone and also for cheese. The secret is to grow old with wisdom, gaining taste as time goes by. Andrea is like an attentive father looking after his cheeses, holding their hands until they are ready to go and see the world. When they are young you have to protect them and set up some rules, as they grow older, you have to try to rescue them from illnesses and assure them longevity. It is no coincidence that all De'Magi cheeses have a name as well as character and identity.
