At Fromagerie Lincet, the 6th generation has joined the adventure and has kept the family values of passion and transmission alive since 1895. Cheesemaking is a passionate profession that's shared within the family. This is how Fromagerie Lincet develops its traditional know-how, through the unique and typical taste of Burgundy and Champagne cheeses. Concerned about the impact of our activity, we recently decided to undertake a corporate social responsibility initiative, called Lait Demain, to highlight all the responsible actions we've been carrying out for nearly 30 years. It is thanks to this positive, forward-looking collective approach, which brings together our social, economic and environmental commitments, that we were awarded the PME+ label by the FEEF in March 2022. This provides us with a renowned benchmark and encourages us to continue and strengthen our actions for tomorrow.
Our company has 3 production sites:
- Saligny, in Yonne (89) for cream-enriched cheeses including IGP Brillat-Savarin,
- Vaudes, in Aube (10) for the production of AOP Chaource,
- Brochon, in Côte d'Or (21) for the production of washed-rind cheeses such as Époisses PDO and Soumaintrain PGI.
To complete our range of cow's milk cheeses, we have diversified into maturing free-range goats' cheeses with local producers. As part of our responsible approach, we have chosen to use our own logistics platform located in the Aube region near Troyes (10).
This has also enabled us to be more responsive in delivering our products throughout France. Over the years, while our methods have been modernized, the recipes for our products remain the same, essentially made from cow's milk collected in the vicinity of our cheese dairies.
We've been working with some of our milk producers for over 50 years! These close relationships have enabled us to build up a genuine dairy industry at the heart of our region, and we are fully committed to working alongside them. We are committed to supporting them in all the steps they take to meet the requirements of our PDO specifications (GMO-free milk, 5-year contract governing remuneration to ensure the best possible return on milk quality, etc....). We regularly discuss good farming practices with our milk producers, in order to enhance the value of their day-to-day work and ensure the continuity of our professions and cheese-making industries.
To sum up, the key points of our commitment to quality milk are 100% of milk paid for at a fair price under 5-year contracts with quality premiums, -85% of producers under PDO or PGI specifications, GMO-free milk -Autonomous collection, A charter of good farming practices drawn up together to enhance the value of our day-to-day activities, and to ensure the continuity of the cheese-making industry.
Respect for tradition through our unchanging recipes, uncompromising milk quality and special attention to the men and women in our industry are our best allies in enabling consumers to enjoy authentic, high-quality cheeses day after day. Each year brings its own challenges, but every player in the industry can count on Lincet's strong commitment.
